Breakfast for Dinner!

Hey!  I thought my first food post on the blog should be breakfast related - so voila - breakfast for dinner!  I'm lucky that my boyfriend shares my love of breakfast food and did not think it was weird to eat this on a Friday night!  


The Menu

  • Stuffed French Toast
  • Chicken Apple Maple Sausages
  • Fruit Salad with Honey-Orange Dressing 


Stuffed French Toast 
I was inspired by Tina from Carrots'n'Cake and decided to try her Almond Butter French Toast using my favorite Justin's Maple Almond Butter!  I love Justin's nut butters even if they are almost $10 a jar - please someone let me know if you find them for less!  In addition to the maple almond butter variety, I also tried one with Justin's Chocolate Hazelnut Butter - SOOOO  rich and delicious! :)

Because I love variety, I also experimented and put light cream cheese between two slices of Ezekiel CinnaRaisin Bread - It was equally delicious and was a nice balance to the toast with the nut butters.

Fruit Salad with Honey-Orange Dressing 

Fruit Composition :)
- Pineapple
-Honey Crisp Apple - my first and my new fav apple
- Banana 
- Pomegranate Seeds
- Walnuts

I wanted to make a fruit salad dressing recipe from Paula Deen that I have made many times before - but it uses canola oil in the dressing - which isn't Weight Watchers friendly - so I made my own lower points value dressing - 

I squeezed one half of an orange over the salad, drizzled it with honey, and sprinkled some poppy seeds on top!  Simple, delicious, and gave the salad an extra special feeling!

The meal was accompanied with an Americano made by my lovely boyfriend in his Bialetti espresso maker.  Of course it is in my ZABAR's mug!

Hey!

       Well, it has taken me a WHILE, but I have finally started my own blog!  I am so excited to have a space to share my passion for food and life with my friends, family, and fellow bloggers.  My name is Allison and I love food!  Cooking has been a serious passion, influence, and part of my life since I was little and received my very first cookbook, appropriately titled, "My Very First Cookbook."  While I love food, I am also interested in health and wellness (as I am an occupational therapist) and have been TRYING to eat a well-balanced diet as well as lose a few pounds (since Europe seems to like to follow me home).  Primarily, I hope this blog serves to help me document interesting meals, share them with others, and keep me creative in the kitchen! I also hope to connect to other food bloggers since the food blogging world fascinates me!  While breakfast is my first love, as you can guess by the title, I do not discriminate and all walks of food and snacks will be posted here!

      In addition to being un-naturally excited to eat breakfast in the morning, I also love everything that the morning brings.  I love the promise of a new day full of surprises, adventures, and reminders that life is the most amazing gift.  Mornings represent possibilities - and I am a true believer that anything is possible!  With that being said, I hope to share some of my life on the blog so that my family and friends can see what I have been up to in New York City.  I also hope to one day add some information on occupational therapy - which is arguably the best profession in the world :)

     I'll leave you with a picture of my birthday breakfast in the Cinque Terre, Italy.  As most of you know, on my birthday my eye was swollen shut due to the Italian insects love of my blood - but I could not turn down a birthday breakfast in one of the most beautiful places in the world!
